Product Alert

 This cute little chocolate bunny contains gluten! Specifically it uses Barley Malt. Barley malt is a sugar derived from glutinous barley. Usually not found in many chocolates. Best to stat away from this brand, Lindt. 

Staying completely, 100 parent, away from gluten and corn has kept me in remission and off of meds.

Easter Candy

 Unfortunately, Easter candy can be chock full of both gluten and corn as well as derivatives. There are safe alternatives if you know what to look for. It would be totally unfair to deprive children (and adults). Here are things to look out for.

Jelly Beans. No! Full of corn syrup. Yumearth brand makes natural jelly beans using sugar instead of corn syrup. Available on Amazon.

Chocolate Bunny. Generally ok. Look elsewhere if it uses "barley malt". This means gluten. Also watch out for creamy innards or fancy decorations.

Peeps. Pure corn syrup. I didn't find much on Amazon either.

Egg dyes. Generally ok but I would use Apple cider vinegar for the mixture. If using the distilled white vinegar, some may leach in the egg. Some dyes don't require vinegar. And some kids won't eat the eggs anyhow.

Easy Chocolate Chip Peanut Butter Cookies

 Here's a gluten and corn free recipe that you won't need to write down. It's so easy to memorize. Just remember 1111 plus chips. 

1 cup peanut butter

1 cup sugar

1 teaspoon baking powder (must be corn starch free such as Featherweight brand)

1 egg beaten

chocolate chips to taste

Bake at 350 degrees 12 to 15 minutes depending on size

That's it! Prepare to indulge. 

These cookies are free from gluten and all grains as well as corn.

Safe Egg Salad

 Once in a while I get a real craving for egg salad. Here's how I make it Crohn's friendly according to my diet. First the mayo. I only use Veganaise. Vegenaise does not use white distilled vinegar. White vinegar is derived from corn. Corn and corn derivatives will flare me. Veganaise uses apple cider vinegar instead. I'm sure it also lends to the flavor. Mayo may also contain corn syrup. Another no no. Second is mustard. Again, mustard contains white distilled vinegar. I have found that using the spice is just as easy and delicious.

No recipe. I just mashed up two hard boiled eggs and added chopped celery, carrots and onion. Then I added Vegenaise, mustard powder, salt, pepper and turmeric. 

I ate mine on a plain rice cake. Ive also used Against the Grain rolls and bagels.

Stir Fried Rice with Tofu

 It would be great if I could just pick up fried rice at my local Chinese restaurant. But impossible when you are avoiding gluten and corn to keep in remission from Crohn's. First off, soy sauce is a big no, full of gluten. There are alternatives. Tonight I used Tamari. There is also available gluten free soy sauce or Bragg's Liquid Aminos. Whatever oil or margarine that is used must be free from corn oil. Simple substitutions that still leave you satisfied.

I had Kinchi with my meal. Great for flavor but also full of pre and probiotics for healthy gut bacteria. And I accompanied my meal with Virgils Root beer. A tasty drink made with real sugar, since I avoid corn syrup.

Here's my general recipe, though many variations are possible depending on what is available and personal preferences. I just use what is in my fridge. I also used tofu, but meat can be used as well. Pre-cook the meat in a skillet separate from the vegetables.

Ingredients:

1 package tofu (patted dry and cubed)

2 cups steamed rice

1 carrot sliced

1 small head broccoli, chopped

handful dinosaur kale, ripped to bite size pieces

mushrooms, chopped

1/4 cup gluten free soy sauce

2 tablespoons sesame seed oil

1 tablespoon white wine vinegar or rice vinegar (never white distilled, derived from corn)

1/4 cup wine

2 tablespoon margarine (no corn)

1 tsp curry

1 tsp garlic powder (or a few cloves chopped)

1 tablespoon brown sugar 

Directions:

1. Fry veggies in extra large pan, double burner pan or wok (this makes a lot)

2. add cubed tofu (or cooked meat) and rice

3. to make the sauce, mix rest of ingredients in small bowl and microwave for 20 seconds 

4. Pour sauce over veggies, tofu and rice distributing evenly

5. On fairly high heat, fry until well blended

Good Foods for Crohn's: Blueberries

 Blueberries! Fresh or frozen these little gems pack a wallop of nutrition. Blueberries provide fiber, vitamin C, vitamin K, manganese and Potassium. Plus they're delicious and can be thrown into any dish from pancakes to salads to smoothies. My favorite way to eat them is just plain, by the handful.

Blueberries also contain a nutrient called pterostilbene, which in a recent study has proved to be a potent anti-inflammatory. Here is a link to the study:

Blueberry season peaks in July, when prices are at their lowest. The berries can be washed, dried and frozen to keep for later months, without losing nutritional content.

Healthy Choice Fudge Bars

 Found these gems at Costco yesterday.  Only 100 calories per bar. Sweetened with natural sugar. No corn syrup. Made with skim milk, so does cause some gas. I'm willing to have a bit of gas in exchange for the creaminess of this treat. Read label. Apparently the older version  contained corn starch, sorbitol and maltodextrin, all corn derivatives. So there may be some older versions circulating out there.

New Study: Connection Between Diet and Crohn’s

Here is the link to a study done last year evaluating the influence of diet on Crohn’s disease. Patients have long known intuitively that this is the case. The two diets used in this study were the Mediterranean Diet and the Specific Carbohydrate Diet. My personal diet falls somewhere in between these two diets. The key for me is to eliminate vinegar and all derivatives of gluten and corn.

Good Foods for Crohn's: Bananas





 Bananas are one of the most versatile foods. It can be part of any healthy meal, snack or dessert. Beautifully portable and easy to throw in your pocket or purse.

Bananas are high in vital nutrients such as B6, Potassium, and Magnesium. They boast 3 grams of fiber per banana. They have about 100 calories and zero fat. 

They can be eaten every day but should be limited to 2 or three peer day. Caution should be taken for diabetics as bananas  contain quite a lot of sugar.

Bananas are great at balancing the colon between constipation and diarrhea.

Bananas are also a great prebiotic. The fibers in banana feed the good gut bacteria promoting healthy balance.

My favorite way to eat them is with peanut butter. Simple and very filling.

Perfect Breakfast: Cream of rice with fruit

 I found a box of Cream of Rice tucked back in my closet. I had forgotten how delicious, healthy and versatile it is. I made the cereal in my microwave according to directions. Then I added strawberries, blackberries, raspberries and banana slices. Drizzled with honey and topped with almonds. Of course any fruits would be good. The added iron is a plus if you have been bleeding.

To stay in remission from Crohn's I avoid all gluten, wheat and corn was well as gluten and corn derivatives. Of course Cream of Wheat would be a big NO. I can eat any fruit and all vegetables except corn. Note: I would not recommend berries or nuts during active flare since seed can get stuck and add to the inflammation. Stick with soothing fruits such as banana.

Chic Pea bowl with Fried Tofu

 This bowl has tons of variations. I literally just use what vegetables happen to be in my fridge. I start with steamed rice as a base. Top with roasted chic peas. Then comes other veggies, cooked and raw. Top with crunchy tofu. Lastly, a drizzle of homemade sauce.

In order to keep my Crohn's in full remission, I eliminate all corn and gluten, as well as corn and gluten derivatives from my diet. What this means for this recipe:

*gluten free soy sauce or Bragg's Aminos

*rice vinegar, apple cider, wine vinegar or balsamic are acceptable. No white distilled vinegar

*Rice flour, or other gluten free flours only

*no corn. Stating the obvious

*for hot sauce I use Siete brand. Check labels though since changes do occur

There are so many variation to this recipe. You can add chicken or shrimp instead of the tofu. Other vegetables such as cauliflower, mushrooms, carrots or cabbage work well too. You can also sprinkle with sunflower or other nuts or seeds. This might also go well with kimchi. 

Ingredients:

*steamed rice

*1 can chic peas

*1/2 head broccoli, cut into bite size

*olive oil

*1/2 block extra firm tofu

*3 tablespoons rice flour

*1/2 red pepper, diced

*3 green onions, sliced

*4 tablespoons gluten free soy sauce

*1 tablespoon creamy peanut butter

*1 tablespoon margarine (No corn oil ingredients. I use Earth Balance)

*3 teaspoon brown sugar

*1/4 teaspoon powdered garlic

*1 tsp minced ginger

*1/2 teaspoon vinegar (Not distilled)

*1 teaspoon sesame seed oil

*Siete hot sauce 

*paprika to taste

Directions:

1. Steam rice

2. Rinse and pat dry chic peas

3. wrap tofu in paper towel and gently press out some moisture

4. Spread chic peas and broccoli on cookie sheet, drizzle with olive oil, salt, pepper, and paprika

5. Bake until broccoli starts to light brown

6. Meanwhile, toss tofu cubes in rice flour till all sides are coated

7. heat oil in pan, then add tofu. Cook on all sides until golden brown and crunchy

8. While tofu cooks, make sauce. Microwave peanut butter, margarine, soy sauce, vinegar, garlic, sesame seed oil, brown sugar, ginger, hot sauce about 30 seconds. Stir to incorporate peanut butter.

9. Put it all together. Steamed rice with chic peas and vegetables on top. Add crunchy tofu, then red pepper and onion. Drizzle with sauce.

Hot and Sour Soup

 This is the first time trying this recipe and it was really easy. We're all familiar with Hot and sour soup from our local Chinese buffet. This is an easy recipe that I tweaked to be gluten and corn free.

Ingredients:

*32 oz broth or stock (Imagine Foods is gluten and corn free)

*6 oz shiitake mushrooms (or other type if unavailable) (cut into small pieces)

*1 cup water

*1 can bamboo shoots

*1 can bean sprouts (or fresh if you can find them)

*3 green onions, sliced

*1/2 package tofu (cubed)

*1 tablespoon dry Wakame seaweed (optional but I like some green)

*2 tablespoons rice vinegar (can use white wine vinegar in a pinch. But NEVER white distilled vinegar)

*2 tablespoons gluten free soy sauce (or Bragg's Aminos)

*hot pepper flakes, to taste (I used about a teaspoon)

*1 teaspoon sesame seed oil 

*3 tablespoon rice flour 

Directions:

1. Pour some oil in the bottom of soup pot

2. Sautée the mushrooms and bamboo shoots for a few minutes

3.Add everything else except the rice flour

4. Simmer at least 30 minutes

5. In small bowl, mix the rice flour with some of the broth and blend well

6. Add flour mixture to soup and stir

7. simmer another ten minutes as soup thickens

8. I served mine with wild rice by Near East

Cranberry Sauce

 Sweet and Tart! Nothing says Holidays like cranberry sauce. But forget the canned stuff. It's full of corn syrup. In order to keep my Crohn's in remission I avoid all gluten and corn as well as derivatives such as corn syrup.  Instead of canned, I make my own sauce using fresh cranberries. It literally takes five minutes to prepare and is so delicious. 

1 bag fresh cranberries (washed)

1/2 to 1 cup sugar (depending on how sweet/tart you want it)

 1 cup water (We used some orange juice as part of the cup. About half and half)

Put all ingredients into a pot and bring to a boil. Lower heat and simmer as berries start popping. Simmer about five minutes until desired consistency is achieved.

Product Alert: Enjoy Life Chewy Bars

These Enjoy Life Chewey Bars now contain xanthan gum. Xanthan gum is a corn derivative. It is not allowed on my diet as I avoid all gluten, corn and gluten and corn derivatives. Quite unfortunate because they are yummy. Always, always, always check ingredients even on products you buy all the time. Manufacturers change ingredients all the time.

Pacific Foods Red Pepper and Tomato Soup




 I ate this soup for breakfast. Delicious! I added chic peas and Aleia's stuffing cubes. They were super crunchy. All this together made soup into a meal. The container is good for about 4 servings.

I bought the stuffing cubes for Thanksgiving but didn't end up using them. Theses would also be great for croutons. I bought the plain, but these also come with savory seasoning.

Both of these items were found in my normal super mart.
