Quinoa Stuffed Peppers

 Quinoa stuffed peppers. So easy and delicious. Quinoa is natural gluten free and full of protein and fiber. The peppers should be baked in the oven 20 minutes before adding the filling. I used quinoa, broccoli, carrot, snap peas, garlic and sunflower seeds. I cooked the quinoa in broth for extra flavor. Seasoned with cumin, soy sauce and hot pepper flakes. The vegetables should be diced small to cook through. Then I added shredded cheese to the mix. And finally cheese on top. Bake another 20 minutes at 375 degrees. Enjoy!
