My favorite granola, when I don’t have homemade on hand. This went great with sliced bananas! Granola should only use gluten free oats and not contain corn. This would also include maltodextrin, barley malt, corn syrup or corn starch among other things.

Chocolate Icing
Saw this on Facebook and it looked so yummy. Perfect for the Holidays. To make it compliant with my diet I just need to make sure that the powdered sugar does not contain corn starch, as most commercial brands do. Usually organic brands use tapioca, which is safe for me. Just loving my life avoiding gluten and corn to keep me in remission.

Homemade granola
TIs the season for making granola. Everything you need in one bowl. Lots of protein and fiber. Today I used oats, coconut flakes, sunflower seeds, almond flour, ground flax seed, pumpkin seeds, raisins, dry cranberries, coconut oil and honey. Seeds not recommended during active flare. I spread it on a baking sheet and baked it at 300 degrees for 25 minutes. Press down to get crumbles to stick. Be creative with variations.

Having a Safe Thanksgiving
Wishing everyone a safe and healthy Thanksgiving! Here are some things to remember.
Turkey can be ok. Watch out for soy sauce, ketchup and mustard.
Stuffing. Unless it’s gluten free I avoid. This year we are using Aleia’s bread stuffing.
Mash potatoes. Fairly safe. Though watch for sour cream which contains vinegar.
Green beans. Generally safe. Watch seasonings such as soy sauce.
Cranberry sauce. Homemade from fresh is all I use. And it’s delicious and only takes ten minutes to make. I have found cranberry sauce in cans at Whole Foods that use sugar and not corn syrup.
Pumpkin pie. I make my own using gluten free pie shells. Store bought is very iffy.
Sweet potatoes. Watch out for marshmallows. Full of corn syrup. Bruce’s brand is full of corn syrup as well. Though Dandies brand marshmallow uses sugar.
Alcohol. No grain alcohol or beer. I can indulge in wine and brandy.
Corn, corn bread…no! Just no!
One more thing to consider: Thanksgiving is about enjoying time with friends and family. Savor the time you have with them. If you know something flares you, don’t take a chance. Eat the foods you know are safe. Enjoy your visit. Stay safe!!!

Aleia’s Stuffing and Panko crumbs
Aleia’s. This is a wonderful brand for Thanksgiving. Found both of these at Whole Foods but may be available elsewhere. I think I saw them at my local grocery last year. Aleia’s uses white and brown rice flour. The stuffing cubes can double as croutons. I use the Panko crumbs to make spinach balls.

Truly the best non dairy yogurt I have tried! Super thick and creamy. Made from coconut milk. They use cane sugar for sweetener. Comes in a variety of flavors. I could only find this at Whole Foods.

Forager Yogurt
New favorite breakfast. Yogurt with berries and granola. Today I had Forager brand yogurt made from cashew milk. The consistency was a little thin but tasted good. Dairy free so no gas. The granola was Bob Red Mills. Super crunchy. I mean like watch your teeth crunchy! But gluten free. Everything here to start your day. Berries not recommended during active flare.

Energy Balls
These are soooooo good! The possibilities for different versions is endless. I always use gluten free oats and pure maple syrup. I actually didn’t have ground flaxseed so used 1/4 cup almond flour and 1/4 cup psyllium seed husk instead. Tastes amazing. Tons of fiber too.

Simple Mills Pancake and Waffle mix
Don’t expect these to taste like regular pancakes. In my opinion they are actually better! Made with almond flour for a nice hearty nutty taste. Both gluten and corn free. Most importantly, no xanthan gum which is often added to these types of mixes. Xanthan gum is a corn derivative. It’s also very important to only use pure, 100 percent maple syrup. Commercial syrup is made mostly of corn syrup.

Staples of My Diet
Fruit I can eat any fruit. However if there is any irritation at all, berries should be avoided because of the tiny seeds. Bananas are the star here. Bananas have tons of beneficial fiber as well as must needed potassium. Apples are great, but should be peeled during flare. I avoid canned fruit but use occasionally as long as they are free from corn syrup.
Vegetables Avoid corn in all forms! No corn EVER! Any other vegetable, including potatoes, is fair game. Though vegetables should be cooked during flares. I do not use salad dressings due to many ingredients that can cause a flare, especially White Distilled vinegar which is derived from corn. I just use olive oil and balsamic or apple cider vinegar or lemon juice.
Fish Fish in itself will never flare me. I avoid breading of any kind because of the gluten. Soy sauce is also glutinous. I use gluten free soy sauce or Bragg's Liquid Aminos. I also enjoy canned tuna and sardines, packs in water only.
Rice There are tons of different kinds of rice out there. Nice for when there is diarrhea. Check ingredients if this is boxed. Most are not good. Plain is best.Then season it yourself.
Cereal Most commercial brands contain gluten or corn. One exception is Chex rice or cinnamon. Oats are good as long as they are gluten free oats. Cream of rice is a good substitute for cream of wheat. There are a few granolas on the market that are gluten and corn free. I usually make my own to be sure of all ingredients.
Meat Chicken, steak, stew, pork...all good in their natural state. I keep them as plain as possible. No breading. No gravy. No soy sauce. No ketchup. No commercial barbecue sauce. Hamburger needs to be pure, no glutinous fillers. I also avoid most lunch meats. They often contain dextrose or maltodextrin, derived from corn.
Tofu Great for stir fry. I fry mine with gluten free soy sauce, olive oil and turmeric. Tastes like eggs.
Lentils and Split Peas I like them cooked and then mixed with rice. Great vegetarian protein.
Dairy Products While dairy won't actually flare me, I am lactose intolerant and it will cause tons of gas. I use Fairlife Lactose free milk. I like dairy free yogurts, especially Forager brand. I will eat cheese some times and just know I'll be gassy.
Beans While they can make you gassy, they are a safe protein. I love chic peas in particular. Watch out for barbecue sauces as they contain vinegar and also corn syrup.
Eggs All kinds are good, though avoid omelets in restaurants. They sometimes use premixed eggs and sometimes even pancake batter for a fluffy texture. I also avoid egg salad because of the mayonnaise which can contain both vinegar and corn syrup. I use Vegenaisse and make my own.
Gluten Free Bagels Most brands are terrible. The only brand I like is Against the Grain.
Gluten Free Waffles Van's is a good choice.
Oil Basically any oil except corn oil.
Nuts and Seeds All good. Though seeds should be avoided during a flare.
Wine and Brandy I avoid all grain alcohol including beer.
Chocolate In pure form, most chocolate is safe. Though I can not eat nougat or caramel. Nothing gooey. No truffles.
Of course there are many other foods I can eat. Going grocery shopping is an adventure. The key is to find foods that are both gluten and corn free as well as free from gluten and corn derivatives.

Xanthan gum
One ingredient that I avoid like the plague is xanthan gum. Found everywhere including soft cheese, ice cream and gluten free products! But this is another example of a corn derivative. It will flare me. It took many years to figure out the connection between seemingly unrelated foods. This is a good example.

Cabbage and Lentil soup
Getting into the Fall soup season. Here’s my recipe for delicious cabbage and lentil soup. You can leave it vegan or add some meat. I added a bit of leftover chicken. Free from both gluten and corn. The soy sauce must be gluten free or Braggs liquid amino’s. Any additional vegetables can be thrown in as well. I threw in some leftover broccoli. Put all ingredients in a pot and simmer at least one hour. Enjoy!
Ingredients;
8 cups water
1/3 cup lentils
2 potatoes diced or sliced
3/4 head cabbage chopped
4 carrots sliced
5 cloves garlic, chopped or sliced
1 onion, chopped
1 can tomato sauce or 1/2 can tomato paste
1/2 bag frozen spinach, or big bunch fresh
1 tbsp gluten free soy sauce or Braggs liquid amino’s
1 tbsp brown sugar
1 tbsp miso paste
1 tbsp olive oil
1 tsp curry powder, more if you like spicy

Van’s gluten free waffles
Van’s gluten free waffles. Gluten and corn free. Yum! I had mine with peanut butter and real maple syrup. Commercial syrups are made with corn syrup. Corn in any form will flare me. I only use 100 percent maple syrup. Little on the expensive side but worth it.

Safe Birthday
How to have a safe birthday. Just had my birthday a few days ago. We went out to our local steak house. I had a beautiful filet with a baked potato. Only butter on the potatoe. Sour cream contains white distilled vinegar. White distilled vinegar is derived from corn. As an appetizer we had baked Brie with sliced apple and sliced almonds. For dessert my daughter made me a beautiful cake from kinnikinnick. It is gluten and corn free. The icing was pure sugar, butter and Chocolate powder. I would never even touch a regular birthday cake. Red wine to celebrate. I only drink wine or brandy. Never beer or grain liquors. No flare or irritation the next day. Avoiding gluten and corn in all forms has kept me in remission.

365 Chocolate with quinoa
Game changer. This tastes just like Nestle Crunch. They use crispy quinoa instead of rice crispies. Rice crispies are full of gluten. Delicious though it could use more quinoa actually. Found at Whole Foods.
Forager Yogurt
Breakfast today. Forager yogurt with fresh strawberries. Forager uses cashew milk. Very creamy. Just the right amount of sweetness. And because it’s dairy free, no gas later on. No corn starch or corn syrup found in other commercial yogurts.

Sichuan Chicken
Being gluten and corn free makes it almost impossible to eat Chinese food. The biggest problem being the soy sauce. Below is a recipe I found and then tweaked for Sichuan chicken. It came out great. I actually added fresh green beans this time and it worked out well.
Ingredients:
* 2 chicken breasts, cooked
* 4 celery ribs, cut julienne
* 2 carrots, cut into ribbons
* 1 green onion, sliced
* 1/4 cup canola oil
* 2 Tablespoons potatoes starch
* 1 and 1/2 tsp sesame seed oil
* 4 Tablespoons gluten free soy sauce or Bragg's liquid aminos
* 1 Tablespoon creamy peanut butter
* 3 tsp brown sugar
* 1/4 tsp garlic powder
* 1 tsp minced ginger
* hot pepper flakes to taste
*2 cups cooked rice, if desired
Directions:
1. If meat is not pre shredded, cut into thin strips
2. cut celery, carrot and green onion in strips, ribbons and slices
3. In large bowl combine chicken strips with potatoes starch, toss well to coat all sides
4. Heat oil in non stick pan
5. Add meat to pan, stirring frequently till cooked, several minute
6. Add vegetables and ginger, cook until desired tenderness
7. In small bowl, mix soy sauce, sugar, garlic powder, peanut butter and desired pepper flakes
8. whip together
9 Add sauce to pan and stir
10. serve with rice

Rice with lentils and split peas
What I eat: rice with lentils and split peas topped with eggs. I top mine with olive oil, salt, pepper and turmeric. The rice is part of the BRAT diet. The legumes for extra protein. And the turmeric is a natural anti-inflammatory. The eggs make it a meal. The lentils and split peas need rinsed and boiled for at least 20 to 30 minutes. I use 1/4 cup lentils and 1/4 cup split peas to 2 and 1/2 cup cooked rice.
In order to stay in remission from Crohn’s I avoid all gluten and corn as well as all gluten and corn derivatives

Almond Breeze Yogurt
Almond Breeze comes in a variety of flavors. Very surprisingly creamy. A tad too sweet for me. Fruit on the bottom but it’s not really needed. No corn syrup or starches. Good source for those all important probiotics. No gas related to lactose. All in all a good fit.

Banana Smoothie
Nothing better to ease an upset stomach. This smoothie was made with a big bunch of fresh spinach, 1 frozen banana, scoop Warrior brand protein powder, 1/4 cup gluten free quick oats and 3/4 cup lactaid milk. And it was delicious! Warrior brand is free from starches and corn sugars. The oats must be gluten free. The milk can also be milk substitutes. I like almond and soy.

Tuna salad with chopped fresh spinach and Vegenaise. All on a gluten free Wasa cracker. These crackers can be hard to find. I got mine at Walmart. The Vegenaise uses apple cider vinegar and no corn syrup. Honestly just as tasty.

Jovial pasta
Simple but delicious. Jovial gluten free pasta with olive oil, spinach and tomato. I also added toasted pine nuts after the pic was taken. Sprinkled with shredded Parmesan. Make sure the cheese is free from corn starch. This brand uses potato starch instead. Any vegetable will do such as broccoli or peppers. Quick meal for a busy day.

Zucchini muffins
It’s that time of year again when lots of zucchini’s are popping up in our gardens. Here’s an easy recipe for zucchini muffins. Delicious by themselves, but even better topped with peanut butter or Nutella. Full of fiber.
1 medium zucchini shredded
3 eggs
2 tablespoons molasses
3/4 cup brown sugar
1/4 cup melted butter
3 tablespoons melted coconut oil
1/2 tsp salt
1/4 cup almond flour
1/2 cup gluten free oats
1 and 1/4 cup rice flour
1 tsp baking powder (without cornstarch)
1 tsp baking soda
-first mix wet ingredients plus sugar then dry ingredients. Lastly fold in zucchini shreds
-other flours can be used instead some of the rice flour
-if you can’t find baking powder free from cornstarch then use two tsp baking soda
Bake 20 to 25 minutes for muffins at 350 degrees.
Can also be frozen for later use

My Mochi
Ok haven’t made a mistake for a long time. Until last night. I got these quite delicious mochi at Costco. I thought I checked the ingredients well. Nope. Sick this morning. I noticed today (too late) an ingredient called trehalose. I found that this is a sugar that is found in many fruits and vegetables including mushrooms. However it is very difficult to extract it. So a company in Japan found a way to make it using corn starch. Sigh. My body always knows. Take away is that we all make mistakes.

Airplane travel tips
I just came back from traveling internationally. My flight was almost 11 hours. The important thing is that I survived those almost 11 hours without incident. Here are some tips to make airplane travel more doable.
*Try to get an aisle seat. There is nothing worse than being blocked in when the need to use the bathroom hits. If you don't have an aisle seat, kindly ask the person in the aisle seat if they are willing to trade. Its a 50/50 shot but worth trying.
*Eat very light the day before. Not starving but lighter. So don't go heavy on the beans or load up on dairy.
*Go to the bathroom as soon as the urge comes. You may need to wait a bit. It also takes a while to unbuckle and maneuver out of the seat.
*Scout out the bathroom locations. Depending on the size of the pane there may be several tucked away.
*wear protection for extra security. This can be in the form of an adult diaper or a large female pad. Gross yes. Hopefully will never need it.
*Bring extra underwear and shorts/pants in your carryon.
*Extra caution eating at the airport. Be very careful eating at any of the restaurants. If you eat something disagreeable before boarding, it may hit mid-flight.
*Pack safe snack foods for your carry-on. I like my coco loco protein bars.
*order the meal ahead of time if possible. They still may not be safe, but there's a better chance that at least some of the food will be ok.
*Bring meds in your carry-on. If your luggage gets lost, you're still ok.
*Try to chill. I know it's hard. With all the back up prepping it'll be ok. Lavender oil does a nice job with relaxing. Also try breathing exercises. Distract yourself with a movie. Anxiety only makes things worse and creates a feedback loop.

This morning I made French toast using rice cakes. Why have I never thought of this before! Once the rice cake was dipped in the egg it became more bread like. Bonus: held the syrup better from the grooves. I only use pure maple syrup since commercial brands used corn syrup.

Chocolate Chip Banana Bread
Going to repost my banana bread recipe. Go to your kitchen. You probably already have very ripe bananas.
This recipe has been tweaked a few times to make it extra delicious. The banana and apple sauce lend a moisture that doesn't necessitate extra fat. There's a LOT of fiber in this. If you want less, cut down on the ground flax seed.
Why this fits into my diet to keep me in remission from Crohn's: I avoid all gluten and corn, as well as all gluten and corn derivatives. Of course the flours, almond and rice, are gluten and corn free. The applesauce is natural, so no corn syrup. The oats are gluten free. I use Bob's Red Mill brand. Most commercial baking powders are mixed with corn starch. I use Featherweight brand, which uses tapioca flour instead.
Ingredients:
2 ripe bananas
2 eggs, beaten
1/2 cup milk (or milk substitute)
1 tsp vanilla
1/2 cup applesauce (natural, without corn syrup)
3/4 cup brown sugar
1/4 cup ground flax seed
1/4 cup almond flour
1/2 cup gluten free oats
1 cup rice flour
2 tsp baking powder (free from corn starch)
cinnamon to taste
1/2 cup chocolate chips (optional)
Directions:
1. Preheat oven to 350 F
2. Mash bananas in a large bowl
3. Add egg, milk, vanilla, applesauce and brown sugar; mix well
4. Mix all dry ingredients in separate bowl
5. Slowly stir dry ingredients into wet ingredients
6. Mix in chocolate chips if desired
7. Coat bread pan with oil or margarine, or use parchment paper
8. Bake 45 minutes
Makes one loaf

Chicken salad with potato chips
Chicken salad is super easy if you start with leftover chicken. I just add carrots, celery and Vegenaise. Any vegetable will do. I also add peppers and broccoli when I have them on hand. A little salt and pepper too. Now here's the key: Vegenaise. Made from apple cider vinegar and not white distilled vinegar which is derived from corn. Avoiding corn derivatives as well as gluten has kept me in remission and off of meds.
I had it with Real Sugar Pepsi, no. corn syrup here. And Cape Cod potato chips, original. This is not true for the salt and vinegar or the low fat versions.

Fairlife lactose free milk
Just a quick note about this milk. I loved it! What I love about it is that its not sweet like other lactose free milks. It was so satisfying. Tastes like regular milk. I generally avoid or at least cut down on my dairy products since they can cause uncomfortable gas. It won flare me, but it's not pleasant. Available at Walmart.
