Quinoa

     One delicious gluten free grain is quinoa. It is actually a seed. It is easy to cook. Quinoa can be cooked in a rice steamer with the proportion of one part quinoa to two parts water. It is also full of fiber.

    The above recipe was made with cooked quinoa topped with roasted vegetables, green onions, slivered almonds and feta cheese. The quinoa was cooked in broth for added flavor.

     Quinoa can be a good gluten free substitute for couscous, which is what this recipe originally called for.
